Savory Zucchini, Ham & Cheese Bake

📝 Ingredients

For the Batter

  • 3 large eggs
  • 1 cup (240 ml) milk
  • ½ cup (120 ml) vegetable oil
  • 1½ cups (190 g) all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Filling

  • 1 medium zucchini, diced
  • 1 medium potato, peeled and diced small
  • 5 oz (140 g) cooked ham, diced
  • 1 cup (100 g) shredded mozzarella cheese
  • ½ cup (50 g) shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano

For the Pan

  • 1 tablespoon butter or vegetable oil
  • 1 tablespoon flour or breadcrumbs, for dusting

👩‍🍳 Instructions

  1. Prepare the vegetables: Wash the zucchini and cut it into small pieces. Peel the potato and dice it into very small cubes so it cooks properly inside the bake.
  2. Make the batter: In a large bowl, whisk the eggs, milk, and vegetable oil until smooth.
  3. Add the flour, baking powder, salt, black pepper, garlic powder, and oregano. Mix until you have a smooth, thick batter. Do not overmix.
  4. Add the diced zucchini, potato, ham, mozzarella, cheddar, and parsley. Gently fold everything together until evenly distributed.
  5. Prepare the pan: Grease a 9-inch (23 cm) round baking pan with butter or oil and lightly dust it with flour or breadcrumbs.
  6. Pour the mixture into the prepared pan and spread it evenly.
  7. Bake: Preheat the oven to 375°F (190°C). Bake for approximately 40–50 minutes, or until the top is deeply golden and a toothpick inserted into the center comes out clean.
  8. If the top starts browning too quickly, loosely cover it with aluminum foil during the final part of baking.
  9. Remove from the oven and let it rest for 10–15 minutes before slicing.
  10. Cut into wedges and serve warm. The inside should be soft and fluffy, with melted cheese and pieces of zucchini, potato, and ham throughout. 🧀🥒

For the best texture, cut the potato into very small cubes and don’t make the vegetable pieces too large. This helps everything cook evenly while keeping the bake moist and fluffy.
