🍍 Upside-Down Pineapple Cake

Ingredients
For the topping:
1 can pineapple rings, drained
8–10 maraschino cherries
½ cup brown sugar
¼ cup melted butter
For the cake:
1½ cups all-purpose flour
1 cup granulated sugar
½ cup unsalted butter, softened
3 large eggs
½ cup pineapple juice
½ cup milk
2 teaspoons baking powder
1 teaspoon vanilla extract
A pinch of salt
Instructions
Preheat the oven to 350°F (175°C).
Grease a round cake pan with butter.
Mix the melted butter with the brown sugar and spread it over the bottom of the pan.
Arrange the pineapple rings on top and place a cherry in the center of each ring.
In a bowl, beat the softened butter and sugar until creamy.
Add the eggs one at a time, then add the vanilla extract.
In another bowl, combine the flour, baking powder, and salt.
Gradually add the dry ingredients to the batter, alternating with the milk and pineapple juice. Mix until just combined.
Pour the batter over the pineapple and cherries and smooth the top.
Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool for about 10 minutes, then carefully invert it onto a serving plate.
