Slow-Braised Moroccan-Style Lamb Shank with Apricots, Potatoes & Toasted Almonds

🛒 INGREDIENTS

For the Lamb

  • 2 large lamb shanks, about 1½–2 lb each
  • 2 tablespoons olive oil
  • 1½ teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1½ teaspoons ground cumin
  • 1 teaspoon ground paprika
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon turmeric
  • ¼ teaspoon cayenne pepper, optional

For the Aromatic Sauce

  • 1 large yellow onion, finely chopped
  • 5 cloves garlic, minced
  • 1 tablespoon fresh ginger, finely grated
  • 2 tablespoons tomato paste
  • 2 cups beef or lamb broth
  • 1 cup crushed tomatoes
  • ½ cup dry red or white wine, optional
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 cinnamon stick
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • ½ teaspoon saffron threads, optional
  • 1 cup dried apricots, halved
  • ½ cup pitted dates or raisins, optional

For the Potatoes

  • 1½ lb baby potatoes
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika

For the Almond Topping

  • ½ cup sliced almonds
  • 1 teaspoon olive oil or butter
  • Pinch of salt

For Garnishing

  • ¼ cup fresh parsley, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1–2 tablespoons toasted sliced almonds
  • Freshly ground black pepper
  • A little lemon zest, optional

👩‍🍳 INSTRUCTIONS

1. Prepare the Lamb

Pat the lamb shanks completely dry with paper towels. This is important because dry meat will brown much better.

Season all sides generously with salt, black pepper, cumin, paprika, coriander, cinnamon, ginger, turmeric, and cayenne if using.

Let the lamb sit at room temperature for about 15–20 minutes while you prepare the other ingredients.

2. Brown the Lamb

Heat 2 tablespoons olive oil in a large heavy-bottomed Dutch oven or oven-safe pot over medium-high heat.

Add the lamb shanks and sear them for approximately 3–4 minutes per side, turning carefully until they develop a deep golden-brown crust.

Don’t rush this step. The caramelized exterior adds a tremendous amount of flavor to the finished sauce.

Remove the lamb from the pot and place it on a plate.

3. Build the Flavor Base

Reduce the heat to medium.

Add the chopped onion to the same pot and cook for 5–7 minutes, stirring occasionally, until softened and lightly golden.

Add the minced garlic and fresh ginger. Cook for another 30–60 seconds, just until fragrant.

Add the tomato paste and stir continuously for about 1–2 minutes. The tomato paste should darken slightly.

4. Add the Spices and Liquid

Add the cumin, paprika, coriander, cinnamon, turmeric, and thyme.

Pour in the broth and crushed tomatoes. If using wine, add it now.

Use a wooden spoon to scrape the browned bits from the bottom of the pot. Those browned bits are packed with flavor.

Add the honey, lemon juice, cinnamon stick, bay leaves, and saffron if using.

Stir everything together.

5. Return the Lamb

Place the browned lamb shanks back into the sauce.

The liquid should come roughly halfway to two-thirds of the way up the lamb. You don’t need to completely submerge the meat.

Bring the mixture to a gentle simmer.

6. Slow-Braise Until Tender

Cover the pot tightly with a lid and place it in a preheated 325°F (165°C) oven.

Cook for approximately 2½–3½ hours, depending on the size of the lamb shanks.

Turn the lamb once or twice during cooking.

The lamb is ready when a fork slides into the meat easily and the meat is beginning to pull away from the bone.

7. Add the Apricots

During the final 40–45 minutes of cooking, add the dried apricots and dates or raisins if using.

This allows them to become tender while still maintaining some texture.

If the sauce becomes too thick, add a small amount of warm broth or water.

8. Prepare the Potatoes

While the lamb is cooking, wash the baby potatoes thoroughly.

Toss them with olive oil, salt, black pepper, and paprika.

You can add them to the braising pot during the final 45–60 minutes, depending on their size.

Alternatively, roast them separately at 425°F (220°C) for approximately 30–40 minutes, turning halfway through, until golden and tender.

9. Toast the Almonds

Heat a small skillet over medium-low heat.

Add the sliced almonds and toast for 2–4 minutes, stirring frequently.

Watch them carefully because almonds can burn quickly.

Remove them from the pan as soon as they become lightly golden and fragrant.

10. Finish the Sauce

When the lamb is completely tender, carefully remove the shanks from the pot.

Place them on a serving platter and loosely cover with foil.

Remove the cinnamon stick and bay leaves from the sauce.

If the sauce is too thin, simmer it uncovered on the stovetop for 5–10 minutes until it becomes rich and slightly thickened.

Taste and adjust the seasoning with additional salt, black pepper, honey, or lemon juice as needed.

You want the finished sauce to have a beautiful balance of savory, sweet, warm, and slightly tangy flavors.

11. Assemble the Dish

Arrange the tender lamb shanks on a large serving platter.

Spoon the potatoes, apricots, and some of the rich sauce around the meat.

Pour a little extra sauce over the lamb so the surface becomes glossy and juicy.

Finish with toasted sliced almonds, freshly chopped parsley, cilantro, and a little fresh lemon zest if desired.


⭐ IMPORTANT TIPS

  • Don’t skip browning the lamb. It creates the deep roasted flavor that makes the finished dish taste much richer.
  • Keep the braising temperature gentle. A slow cook produces much more tender lamb than aggressive boiling.
  • If you have time, let the lamb rest in the sauce for 10–15 minutes before serving.
  • The sauce should be rich and concentrated, but not overly thick.
  • Add the dried fruit toward the end so it doesn’t completely disappear into the sauce.
  • For an even deeper flavor, prepare the dish a day ahead, refrigerate it overnight, and gently reheat it before serving.
  • Serve with warm crusty bread, couscous, rice, or your favorite roasted vegetables to soak up the sauce.
