Recipe: French Onion Soup

Ingredients:
- 4 large onions, thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 4 cups beef broth
- 1 cup dry white wine (optional)
- 1 tsp thyme
- 1 bay leaf
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- 4 slices French baguette
- 1 1/2 cups grated Gruyère cheese (or Swiss cheese)
Instructions:
Stovetop Method:
- Caramelize the onions: In a large pot, heat butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 30-40 minutes until the onions are deeply caramelized and golden brown.
- Add liquids and seasonings: Pour in the beef broth, white wine (if using), thyme, bay leaf, and balsamic vinegar. Bring to a simmer and cook for 15-20 minutes to allow the flavors to meld. Season with salt and pepper to taste.
- Prepare the bread: While the soup simmers, toast the slices of baguette in a toaster or oven until they’re crisp.
- Assemble the soup: Ladle the soup into oven-safe bowls. Place a slice of toasted baguette on top of each bowl, and sprinkle the grated cheese generously over the bread.
- Broil: Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Slow Cooker Method:
- Caramelize the onions (optional but recommended): In a pan, melt butter and oil, and cook the onions over medium heat until caramelized, about 30 minutes.
- Add to slow cooker: Transfer the caramelized onions to the slow cooker, and add the beef broth, white wine (if using), thyme, bay leaf, and balsamic vinegar.
- Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours. Season with salt and pepper to taste.
- Toast the bread and add cheese: Follow the same instructions for the bread and cheese as in the stovetop method. Ladle the soup into bowls, top with the toasted bread and cheese, and broil until bubbly.
