12 oz egg noodles

2 tablespoons reserved pasta water
Instructions

  1. Cook the Noodles
    Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until tender (al dente). Reserve about ¼ cup of the pasta cooking water, then drain the noodles.
  2. Make the Butter Sauce
    In the same pot or a large pan over low heat, melt the butter. Add olive oil if using. Stir gently until the butter is fully melted and slightly glossy.
  3. Combine
    Return the drained noodles to the pot. Add a splash of the reserved pasta water and toss everything together until the noodles are evenly coated and silky.
  4. Season
    Sprinkle in salt and freshly ground black pepper. Add Parmesan cheese if desired and toss again until everything is well combined.
