Recipe: Beef Empanadas

Introduction: These beef empanadas are the perfect combination of crispy, flaky pastry and flavorful, savory filling. The seasoned ground beef inside is perfectly balanced with spices, making every bite a delight. Paired with a fresh salsa or dipping sauce, these empanadas make for an excellent appetizer, snack, or meal.

Ingredients:

  • 1 lb ground beef
  • 1/2 medium onion, finely chopped
  • 1/4 cup bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1/2 tsp chili powder (optional for spice)
  • Salt and pepper to taste
  • 1/4 cup tomato paste
  • 1/2 cup beef broth (or water)
  • 1 package of store-bought empanada dough (or homemade dough)
  • 1 egg (for egg wash)
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Prepare the filling:
    • In a large skillet, heat a bit of oil over medium heat. Add the chopped onions, bell peppers, and garlic. Cook for 3-4 minutes until softened.
    • Add the ground beef and cook until browned. Drain any excess fat.
    • Stir in the tomato paste, cumin, paprika, chili powder, salt, and pepper. Add the beef broth and let the mixture simmer for 5-7 minutes, or until the filling is thickened and well-combined. Set aside to cool.
  2. Prepare the dough:
    • Roll out your empanada dough if using homemade dough, or separate the discs if using store-bought dough. Place a spoonful of the cooled beef mixture in the center of each dough disc.
    • Fold the dough over the filling to form a half-moon shape, pressing the edges to seal. Use a fork to crimp the edges for a decorative finish.
  3. Bake the empanadas:
    • Preheat your oven to 375°F (190°C). Place the empanadas on a baking sheet lined with parchment paper.
    • Beat the egg and brush it over the tops of the empanadas to create a golden, shiny finish as they bake.
    • Bake for 20-25 minutes, or until the empanadas are golden brown and crispy.
  4. Serve and enjoy:
    • Remove the empanadas from the oven and allow them to cool slightly. Garnish with fresh cilantro and serve with your favorite dipping sauce, such as salsa or sour cream.
