  1. Prepare the crust
    Preheat your oven to 350Β°F (175Β°C). Mix the graham cracker crumbs, sugar, melted butter, vanilla, and salt until evenly combined.
    Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8–10 minutes, then remove and let cool slightly.
  2. Make the filling
    Beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing gently after each addition.
    Add the sour cream, vanilla, lemon juice, flour, and salt. Mix just until everything is combined. Avoid overmixing.
  3. Bake
    Pour the cheesecake filling over the crust and smooth the top.

    Let the berry sauce cool completely.
  5. Assemble
    Remove the chilled cheesecake from the springform pan. Spoon the berry topping generously over the center, allowing some of the beautiful berry sauce to drip naturally down the sides.
    Decorate with fresh strawberries, blueberries, raspberries, and mint leaves.
  6. Serve
    For the cleanest slices, chill the cheesecake well and use a sharp knife dipped in warm water. Wipe the knife between each cut.
