INGREDIENTS
For the Crust:
2 cups graham cracker crumbs

6 tbsp unsalted butter, melted
1 tsp vanilla extract

For the Cheesecake Filling:
24 oz (680 g) cream cheese, softened
ΒΎ cup granulated sugar
3 large eggs, room temperature
1 cup sour cream
1 tsp vanilla extract
1 tbsp lemon juice
2 tbsp all-purpose flour

For the Berry Topping:
1Β½ cups fresh strawberries, sliced
1 cup fresh blueberries

π©βπ³ INSTRUCTIONS
- Prepare the crust
Preheat your oven to 350Β°F (175Β°C). Mix the graham cracker crumbs, sugar, melted butter, vanilla, and salt until evenly combined.
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8β10 minutes, then remove and let cool slightly. - Make the filling
Beat the softened cream cheese and sugar until smooth and creamy. Add the eggs one at a time, mixing gently after each addition.
Add the sour cream, vanilla, lemon juice, flour, and salt. Mix just until everything is combined. Avoid overmixing. - Bake
Pour the cheesecake filling over the crust and smooth the top.
Bake at 325Β°F (165Β°C) for about 50β60 minutes, until the edges are set but the center still has a slight jiggle.
Turn off the oven, crack the door open, and leave the cheesecake inside for 30 minutes.
Remove and cool completely at room temperature, then refrigerate for at least 4β6 hours, preferably overnight. - Make the berry topping
Add the strawberries, blueberries, raspberries, sugar, and lemon juice to a saucepan over medium heat.
Cook for about 5β7 minutes, stirring gently, until the berries release their juices.
Mix the cornstarch with water until smooth. Stir it into the berries and cook for another 1β2 minutes, until the sauce thickens.
Let the berry sauce cool completely. - Assemble
Remove the chilled cheesecake from the springform pan. Spoon the berry topping generously over the center, allowing some of the beautiful berry sauce to drip naturally down the sides.
Decorate with fresh strawberries, blueberries, raspberries, and mint leaves. - Serve
For the cleanest slices, chill the cheesecake well and use a sharp knife dipped in warm water. Wipe the knife between each cut.
