1. Prepare the Chicken
If using freshly cooked chicken, allow it to cool slightly. Shred the chicken very finely using two forks or chop it into small pieces.
The smaller the pieces, the easier it will be to shape the meatballs and the better the texture will be.
2. Combine the Ingredients
Place the shredded chicken in a large mixing bowl.
Add the breadcrumbs, chopped onion, fresh parsley, minced garlic, salt, black pepper, paprika, oregano, onion powder, and chili flakes if using.
Add the eggs and mix everything together thoroughly.
If using Parmesan and mayonnaise or Greek yogurt, add them now and continue mixing until the mixture is evenly combined.
3. Check the Texture
The mixture should be moist but firm enough to hold its shape.
If it feels too wet, add 1–2 tablespoons of breadcrumbs.
If it feels too dry, add 1 tablespoon of Greek yogurt or mayonnaise and mix again.
Let the mixture rest for about 5–10 minutes so the breadcrumbs can absorb some of the moisture.
4. Shape the Meatballs
Lightly wet your hands with water or rub them with a little oil.
Scoop out approximately 2 tablespoons of the mixture for each meatball.
Roll gently between your palms until you have smooth, round meatballs.
You should get approximately 16–20 meatballs, depending on their size.
5. Heat the Pan
Place a large nonstick or heavy-bottomed skillet over medium heat.
Add the olive oil and butter if using.
Allow the oil to become hot but not smoking.
6. Cook the Chicken Meatballs
Carefully place the meatballs into the hot skillet, leaving a little space between each one.
Cook for approximately 3–4 minutes on the first side, until deeply golden brown.
Gently turn them with tongs or a spatula.
Continue turning them every few minutes so they brown evenly on all sides.
Cook for approximately 10–14 minutes total, depending on their size.
Because the chicken is already cooked, the main goal is to create a beautiful golden crust while heating the meatballs thoroughly.
7. Make Sure They Are Fully Cooked
If you’re using freshly cooked chicken in the mixture, make sure the center reaches 165°F (74°C).
The outside should be golden and slightly crispy, while the inside should remain tender and moist.
8. Serve
Transfer the finished chicken meatballs to a serving plate lined with paper towels for a minute to absorb excess oil.
Garnish with fresh chopped parsley.
Serve immediately with lemon wedges, garlic sauce, ranch dressing, yogurt sauce, or your favorite dipping sauce.
