🛒 Ingredients
- 6 large bell peppers — red, green, yellow, or orange
- 8 oz (225 g) diced ham
- 4 oz (115 g) cream cheese, softened
- 1½ cups shredded cheddar cheese, divided
- ½ medium onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp chopped fresh parsley
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp black pepper
- ¼ tsp salt
- 2 tbsp mayonnaise or sour cream
- 1 tbsp olive oil
👩🍳 Instructions
1. Prepare the peppers
Preheat your oven to 375°F (190°C). Wash the bell peppers, cut off the tops, and remove the seeds and membranes. Lightly brush the peppers with olive oil.
2. Make the filling
In a large bowl, combine the diced ham, cream cheese, 1 cup shredded cheddar, diced onion, minced garlic, parsley, Italian seasoning, garlic powder, onion powder, black pepper, salt, and mayonnaise or sour cream. Mix until creamy and well combined.
3. Stuff the peppers
Generously fill each bell pepper with the ham and cheese mixture. Arrange the stuffed peppers upright in a lightly greased baking dish.
4. Add more cheese
Sprinkle the remaining ½ cup shredded cheddar cheese generously over the top of each pepper.
5. Bake
Cover loosely with aluminum foil and bake for 25 minutes. Remove the foil and continue baking for another 10–15 minutes, until the peppers are tender and the cheese is golden, melted, and bubbly.
6. Serve
Let the peppers rest for 5 minutes, then garnish with fresh parsley. Serve warm and enjoy! 🤤🌶️🧀

For extra flavor, you can add a little crispy bacon, cooked sausage, or shredded mozzarella to the filling.
