Ingredients
For the Dough
3 ½ cups (440 g) all-purpose flour
¼ cup (50 g) granulated sugar
2 ¼ teaspoons (7 g) active dry yeast
½ teaspoon salt
¾ cup (180 ml) warm whole milk
1 large egg
4 tablespoons (56 g) unsalted butter, melted
1 teaspoon vanilla extract
For the Cinnamon Filling
4 tablespoons (56 g) unsalted butter, softened
½ cup (100 g) packed light brown sugar
2 tablespoons ground cinnamon
For the Egg Wash
1 egg
1 tablespoon milk
For the Vanilla Glaze
1 cup (120 g) powdered sugar
2 tablespoons milk
½ teaspoon vanilla extract
Instructions
Make the dough: In a large bowl, combine the warm milk, sugar, and yeast. Let sit for 5–10 minutes until slightly foamy.
Add the egg, melted butter, and vanilla. Mix well.
Add the flour and salt gradually. Mix until a soft dough forms.
Knead the dough for about 8–10 minutes, until smooth and elastic.
Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for 1–1½ hours, or until doubled in size.
Prepare the filling: Mix the brown sugar and cinnamon together.
Roll the risen dough into a large rectangle, approximately ¼ inch thick.
Spread the softened butter evenly over the dough, then sprinkle the cinnamon-sugar mixture over the entire surface.
Roll the dough tightly into a log.
Using a sharp knife or pizza cutter, cut the log lengthwise into long strips.
Twist each strip several times with your hands, keeping the cinnamon filling visible, then place the twists on a parchment-lined baking sheet.
Cover loosely and let them rest for 20–30 minutes.
Preheat the oven to 375°F (190°C).
Whisk together the egg and milk. Brush the tops of the twists lightly with the egg wash.
Bake for 18–22 minutes, or until puffed and beautifully golden brown.
Make the glaze: Whisk powdered sugar, milk, and vanilla until smooth. Add a few drops of milk if needed to reach a drizzle consistency.
Let the cinnamon twists cool for about 5 minutes, then drizzle generously with the vanilla glaze.
