Ingredients:
2 ripe plantains
3 cups (375 g) all-purpose flour
¼ cup (50 g) granulated sugar
2¼ tsp (7 g) instant yeast
½ tsp salt
1½ cups (360 ml) warm water, approximately
½ tsp ground nutmeg
1 tsp vanilla extract (optional)
Vegetable oil, for deep frying
Instructions:
Peel the plantains and mash or blend them until smooth.
In a large bowl, combine the flour, sugar, yeast, salt, and nutmeg.
Add the mashed plantains and vanilla extract.
Gradually add the warm water while mixing until you get a thick, stretchy, and slightly sticky batter.
Cover the bowl and let the batter rest in a warm place for 1–1½ hours, or until doubled in size and bubbly.
Heat vegetable oil in a deep pot to 170–175°C (340–350°F).
Scoop portions of the batter with your hand or a spoon and carefully drop them into the hot oil.
Fry in batches, turning occasionally, until golden brown and cooked through, about 4–6 minutes.
Remove and drain on paper towels.
