Ingredients
For the Filling:
1 medium head green cabbage, finely shredded
2 medium carrots, grated
1 medium onion, finely chopped
3 tbsp olive oil
2 cloves garlic, minced
½ tsp salt
½ tsp black pepper
1 tsp paprika
½ tsp dried oregano
¼ cup fresh parsley, chopped
2 tbsp fresh dill, chopped
For the Creamy Sauce:
2 large eggs
1 cup plain yogurt
½ cup milk
½ cup vegetable oil or melted butter
1 tbsp flour
½ tsp salt
½ tsp black pepper
For the Layers:
8–10 sheets phyllo dough
2–3 tbsp melted butter or oil, for brushing
1 tbsp sesame seeds, optional

- Prepare the Filling
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for 2–3 minutes. - Add the Vegetables
Add the minced garlic, shredded cabbage, and grated carrots. Season with salt, black pepper, paprika, and dried oregano. - Cook
Cook for 8–10 minutes, stirring occasionally, until the vegetables are tender and most of their moisture has evaporated. - Add the Herbs
Turn off the heat. Stir in the chopped parsley and dill. Let the filling cool slightly. - Make the Sauce
In a bowl, whisk together the eggs, yogurt, milk, vegetable oil or melted butter, flour, salt, and black pepper until smooth. - Preheat the Oven
Preheat your oven to 375°F (190°C). - Start Layering
Grease a rectangular baking dish. Place one sheet of phyllo dough in the dish and lightly brush it with the creamy sauce. - Add More Phyllo
Place another sheet of phyllo on top and brush lightly with sauce. Continue layering several sheets. - Add the Filling
Spread a portion of the cabbage and carrot mixture evenly over the phyllo. - Continue Layering
Alternate the phyllo sheets and vegetable filling until everything is used, finishing with several sheets of phyllo on top. - Finish the Top
Brush the top generously with the remaining sauce. Sprinkle with sesame seeds if desired. - Bake
Bake for 35–45 minutes, or until the top is deeply golden, crisp, and flaky. - Rest
Remove from the oven and let it rest for 10–15 minutes before cutting. - Serve
