Ingredients
4 cups (1 liter) whole milk
2 tablespoons plain yogurt with live active cultures
Instructions
Pour the milk into a clean saucepan and heat over medium heat, stirring occasionally.
Heat until the milk reaches about 180°F (82°C). Do not let it boil vigorously.
Remove from the heat and let it cool to about 110°F (43°C).
Place the plain yogurt in a small bowl. Add a little of the warm milk and whisk until smooth.
Pour the yogurt mixture back into the saucepan and gently stir.
Pour the mixture into clean glass jars and cover with lids.
Keep the jars warm at around 105–115°F (40–46°C) for 6–10 hours, without disturbing them.
Once the yogurt has set, refrigerate for at least 4 hours before serving.
Storage: Keep refrigerated and use within about 1 week.
