🥔 Crispy Golden Potato Balls

Ingredients
4 medium potatoes, peeled and cut into chunks
½ small red onion, finely diced
2 tablespoons fresh parsley or cilantro, finely chopped
1 teaspoon paprika
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
¾ teaspoon salt, or to taste
1 egg
3 tablespoons all-purpose flour
1 cup breadcrumbs
Vegetable oil, for frying
Instructions
Cook the potatoes:
Place the peeled potato chunks in a pot of salted water. Bring to a boil and cook for about 15–20 minutes, or until fork-tender.
Mash:
Drain the potatoes well and transfer them to a large bowl. Mash until smooth and let them cool slightly.
Season the mixture:
Add the diced red onion, chopped parsley, paprika, black pepper, garlic powder, onion powder, and salt. Mix everything until well combined.
Add egg and flour:
Add 1 egg and 3 tablespoons of flour. Mix until you have a soft mixture that holds together when shaped.
Shape the balls:
Take a small portion of the potato mixture and roll it between your hands to form a compact ball. Repeat until all the mixture is used.
Coat with breadcrumbs:
Roll each potato ball in breadcrumbs, making sure it is completely covered.
Fry:
Heat vegetable oil over medium heat, around 350°F (175°C). Carefully add the potato balls and fry in batches for about 3–5 minutes, turning them occasionally, until golden brown and crispy.
Drain and serve:
Remove the potato balls and place them on a paper towel-lined plate or wire rack to drain excess oil.

Serve hot and crispy with ranch, garlic mayo, spicy ketchup, or your favorite dipping sauce.
