🥒 Crispy Golden Zucchini Fritters

Ingredients
3 medium zucchini, grated
1 teaspoon salt
2 large eggs
½ cup all-purpose flour
½ cup grated Parmesan cheese
2 cloves garlic, minced
2 tablespoons fresh parsley, finely chopped
½ teaspoon black pepper
½ teaspoon paprika
2–3 tablespoons olive oil, for frying
Instructions
Prepare the zucchini:
Grate the zucchini and place it in a large bowl. Sprinkle with 1 teaspoon of salt and let it sit for about 10 minutes.
Remove excess water:
Transfer the zucchini to a clean kitchen towel and squeeze firmly until as much liquid as possible has been removed. This is the key to crispy fritters.
Make the batter:
Place the drained zucchini in a large bowl. Add the eggs, flour, Parmesan cheese, minced garlic, parsley, black pepper, and paprika. Mix well until everything is evenly combined and you have a thick mixture.
Heat the pan:
Heat 2 tablespoons of olive oil in a large nonstick skillet over medium heat.
Shape the fritters:
Scoop about 2 tablespoons of the zucchini mixture into the hot pan for each fritter. Flatten gently with the back of a spoon to form round patties.
Cook:
Fry for about 3–4 minutes on each side, or until the fritters are beautifully golden brown and crispy on the outside.
Drain:
Transfer the cooked fritters to a plate lined with paper towels to remove excess oil.
Serve:
Serve warm with sour cream, Greek yogurt, ranch dressing, or your favorite dipping sauce.
