🍩 Homemade Sugar Donuts

Ingredients
For the dough:
3 ½ cups (440 g) all-purpose flour
¼ cup (50 g) granulated sugar
2 ¼ teaspoons (7 g) active dry yeast
¾ cup (180 ml) warm milk
2 large eggs
4 tablespoons (56 g) unsalted butter, softened
½ teaspoon salt
1 teaspoon vanilla extract
For frying:
Vegetable oil, enough for deep frying
For coating:
1 cup (200 g) granulated sugar

Activate the yeast:
In a small bowl, combine the warm milk, yeast, and 1 teaspoon of the sugar. Let it sit for 5–10 minutes, until foamy.
Make the dough:
In a large bowl, combine the flour, remaining sugar, and salt. Add the eggs, vanilla, softened butter, and the activated yeast mixture.
Knead:
Mix until a dough forms, then knead for about 8–10 minutes, until the dough becomes smooth, soft, and slightly elastic.
First rise:
Place the dough in a lightly greased bowl. Cover and let it rise in a warm place for about 1–1½ hours, or until doubled in size.
Roll and cut:
Transfer the dough to a lightly floured surface. Roll it to about ½ inch (1.25 cm) thick. Use a round donut cutter to cut out the donuts and their centers.
Second rise:
Place the donuts on a parchment-lined tray, cover loosely, and let them rest for 30–45 minutes, until noticeably puffy.
Heat the oil:
Heat vegetable oil to 350°F (175°C). Fry the donuts in small batches so you don’t overcrowd the pan.
Fry:
Fry for about 1–2 minutes per side, turning once, until beautifully golden brown.
Coat with sugar:
Remove the donuts and let excess oil drain. While they’re still warm, toss them generously in granulated sugar until completely coated.
Serve:
Let them cool slightly, then serve warm. Break one open to reveal that soft, fluffy center! 🍩😍
