🍤 Crispy Shrimp & Zucchini Sticks

Ingredients
For the Shrimp & Zucchini Sticks:
1 lb (450 g) raw shrimp, peeled, deveined, and finely chopped
1 medium zucchini, finely grated
3 green onions, finely chopped
1 large egg
½ cup breadcrumbs
¼ cup grated Parmesan cheese
2 cloves garlic, finely minced
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon paprika
2 tablespoons fresh parsley, finely chopped
2–3 tablespoons olive oil or vegetable oil, for cooking
For the Creamy Dipping Sauce:
½ cup mayonnaise
¼ cup sour cream or Greek yogurt
1 tablespoon lemon juice
1 small garlic clove, minced
1 tablespoon fresh parsley or dill, chopped
¼ teaspoon salt
¼ teaspoon black pepper
Instructions
Prepare the zucchini: Grate the zucchini and squeeze it very well with a clean kitchen towel or paper towels to remove as much excess moisture as possible.
Prepare the shrimp: Peel and devein the shrimp, then finely chop them into small pieces.
Make the mixture: In a large bowl, combine the chopped shrimp, grated zucchini, green onions, egg, breadcrumbs, Parmesan, garlic, salt, black pepper, garlic powder, paprika, and parsley.
Mix everything thoroughly until the ingredients are evenly combined and the mixture holds together when pressed.
Shape the sticks: Take a small portion of the mixture and shape it with your hands into long, even sticks. Repeat until all the mixture is used.
Cook: Heat the oil in a large skillet over medium heat. Carefully place the sticks into the pan without overcrowding.
Cook for about 3–4 minutes per side, gently turning them as needed, until they are golden brown and cooked through.
Transfer the cooked sticks to a plate lined with paper towels to absorb excess oil.
Make the sauce: In a small bowl, whisk together the mayonnaise, sour cream or Greek yogurt, lemon juice, garlic, parsley or dill, salt, and black pepper until smooth.
Serve: Arrange the crispy shrimp and zucchini sticks on a serving plate with the creamy dipping sauce.
Serve immediately while hot and crispy. Enjoy! 🍤🥒✨
