Ingredients
For the Cake:
2½ cups (313 g) all-purpose flour
1½ cups (300 g) granulated sugar
1 cup (227 g) unsalted butter, softened
4 large eggs
½ cup (120 ml) milk
2 tsp vanilla extract
2 tsp baking powder
¼ tsp salt
Zest of 2 lemons
2 tbsp fresh lemon juice
For the Chocolate Batter:
¼ cup (22 g) unsweetened cocoa powder
2 tbsp (30 ml) milk
For the Chocolate Glaze:
1 cup (170 g) chocolate, chopped
½ cup (120 ml) heavy cream
👩🍳 Instructions
Prepare the batter: Preheat your oven to 340°F (170°C). Grease and line a round cake pan with parchment paper.
Beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
Add the vanilla, lemon zest, and lemon juice. Mix until combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the batter, alternating with the milk. Mix just until combined.
Make the chocolate batter: Divide the batter into two equal portions. Keep one portion as the lemon-vanilla batter. Add the cocoa powder and 2 tablespoons of milk to the second portion and mix gently.
Create the marble pattern: Spoon the lemon and chocolate batters alternately into the prepared pan. Use a skewer or knife to gently swirl the two batters together. Avoid over-swirling.
Bake: Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool completely before removing it from the pan.
Make the glaze: Warm the heavy cream until hot but not boiling. Pour it over the chopped chocolate and let it sit for 1–2 minutes. Stir until smooth and glossy.
Finish: Pour the chocolate glaze over the cooled cake and gently spread it over the top. Create a decorative swirl if desired.
