Vegan Sausage Recipe
A hearty and flavorful vegan sausage that’s so good, even your non-vegan friends will ask for the recipe! This dish will quickly become a family favorite. Your loved ones won’t believe it’s plant-based!
Ingredients:
- 1 cup cooked lentils (or chickpeas)
- 1 cup vital wheat gluten
- 1/2 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons tomato paste
- 1 tablespoon smoked paprika
- 1 tablespoon ground fennel seeds (for that sausage flavor)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon ground black pepper
- 1/2 cup vegetable broth
- 2 tablespoons olive oil (plus extra for cooking)
Instructions:
- Prepare the ingredients: In a bowl, mash the cooked lentils or chickpeas until slightly chunky. Set aside.
- Mix the dry ingredients: In a separate bowl, combine the vital wheat gluten, breadcrumbs, smoked paprika, fennel seeds, thyme, oregano, and black pepper.
- Saute onions and garlic: In a pan, heat olive oil over medium heat. Add the chopped onion and garlic and cook until softened, about 5 minutes.
- Combine everything: Add the mashed lentils or chickpeas, soy sauce, tomato paste, vegetable broth, and the sautéed onions and garlic into the dry ingredient mix. Stir until everything is well combined. The mixture will be thick and slightly sticky.
- Form the sausages: Take a handful of the mixture and shape it into a sausage link, about the size of a regular sausage. You can make them as long or short as you like. If the mixture is too sticky, lightly wet your hands.
- Steam the sausages: Place the shaped sausages on a steaming rack or in a heatproof dish and steam them for about 30 minutes, or until firm to the touch.
- Cook the sausages: Heat some olive oil in a pan over medium heat. Add the steamed sausages and cook, turning occasionally, until they’re golden and crispy on all sides, about 5-7 minutes.
- Serve and enjoy: Serve your vegan sausages in a bun, with sautéed onions, mustard, or whatever toppings you like.
