Introduction:

This Tiramisu Cake is a beautiful twist on the classic tiramisu. It features layers of coffee-soaked ladyfingers and creamy mascarpone filling, all encased in a fluffy, delicate layer of cocoa powder and coconut flakes. Ingredients:

  • For the Cake:
    • 24-30 ladyfingers (savoiardi)
    • 1 cup strong brewed coffee (cooled)
    • 1/4 cup rum or coffee liqueur (optional)
  • For the Filling:
    • 2 cups mascarpone cheese
    • 1 cup heavy whipping cream
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract
  • For the Decoration:
    • Unsweetened cocoa powder
    • Shredded coconut (for the edges)
    • Fresh mint leaves (for garnish)

Instructions:

  1. Prepare the coffee:
    • Brew a strong cup of coffee and allow it to cool. If desired, add rum or coffee liqueur for an extra flavor boost.
  2. Make the filling:
    • In a mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract.
    • Beat with an electric mixer on medium speed until the mixture becomes smooth, thick, and fluffy. Set aside.
  3. Assemble the cake:
    • Dip each ladyfinger briefly into the cooled coffee (do not soak them too long to avoid sogginess).
    • Arrange a layer of dipped ladyfingers at the bottom of a round cake pan or springform pan.
    • Spread a layer of the mascarpone filling over the ladyfingers, smoothing it out evenly.
    • Repeat the process, layering more dipped ladyfingers and mascarpone filling until the pan is full, finishing with a layer of the mascarpone filling on top.
  4. Chill the cake:
    • Cover the cake with plastic wrap and refrigerate it for at least 4 hours, preferably overnight, to let the flavors meld and the cake firm up.
  5. Decorate:
    • Once the cake has set, dust the top with cocoa powder.
    • Garnish the edges with shredded coconut and place a few fresh mint leaves in the center for a pop of color.
  6. Serve:
    • Slice the cake and serve chilled for a refreshing and indulgent treat.
