Sweet Heat Honey Pickled Garlic!

Ingredients
2 cups whole peeled garlic cloves
1 cup apple cider vinegar
1 cup water
1 3 to 1 2 cup raw honey
1 tablespoon sea salt
1 to 2 fresh red chili peppers thinly sliced
1 teaspoon crushed red pepper flakes
Optional 1 teaspoon mustard seeds
Instructions
Pack garlic cloves into a clean glass jar. Add sliced chili peppers, pepper flakes, and mustard seeds if using.
In a saucepan combine vinegar water honey and salt. Warm gently until the honey dissolves fully. Do not boil.
Pour the hot brine over the garlic making sure everything is fully submerged. Tap the jar gently to release air bubbles.
Let cool then seal and refrigerate.
Wait at least 7 days before eating. Flavor improves over 2 to 3 weeks.
Storage
Keep refrigerated. This is a fridge pickle and not shelf stable.
