These Mini Corn & Cheese Cups are the perfect bite-sized appetizer for parties or family gatherings! Packed with sweet corn, creamy cheese, and a savory filling, these little treats are baked to perfection with a crispy, golden crust. They are simple to make, delicious, and always a hit!

Ingredients:

  • 24 mini wonton wrappers (or use small tart shells)
  • 1 cup canned corn (drained, or fresh/frozen corn)
  • 1/2 cup cream cheese (softened)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped green onions (optional)
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 teaspoon paprika (optional, for color and flavor)
  • 1/4 cup shredded cheddar cheese (for topping)

Instructions:

  1. Prepare the wonton wrappers: Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin. Press the wonton wrappers into each cup of the muffin tin to form little cups. Bake for 5-7 minutes until they are crispy and golden brown, then set aside to cool slightly.
  2. Make the filling: In a medium bowl, combine the cream cheese, shredded mozzarella, grated Parmesan, mayonnaise, garlic powder, and salt and pepper. Mix well until smooth and creamy.
  3. Add corn and green onions: Fold in the corn and chopped green onions (if using) to the cheese mixture.
  4. Fill the cups: Spoon the corn and cheese filling into each baked wonton wrapper, filling each one generously.
  5. Top with cheese: Sprinkle shredded cheddar cheese on top of each filled cup.
  6. Bake: Return the filled cups to the oven and bake for an additional 5-7 minutes, or until the cheese on top is melted and golden.
  7. Serve: Let the mini cups cool for a few minutes before serving. You can garnish with a sprinkle of paprika or fresh herbs if desired.
