Ingredients:
2 medium zucchini, sliced into rounds
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 red onion, sliced
2 tbsp olive oil
2 cloves garlic, minced
1 ½ lbs (700g) boneless chicken breasts or thighs, cut into cubes
1 tsp dried oregano
1 tsp dried basil
½ tsp paprika
Salt and black pepper, to taste
1 cup cherry tomatoes, halved
½ cup crumbled feta cheese
Fresh parsley or basil, chopped (for garnish)
Lemon wedges, for serving
Instructions:
- Preheat oven to 400°F (200°C). Lightly grease a baking dish or large ovenproof skillet.
- Prepare vegetables: Arrange zucchini, bell peppers, and red onion in the dish. Drizzle with 1 tablespoon of olive oil, season with salt and pepper, and toss to coat evenly.
- Add chicken: In a bowl, mix chicken pieces with remaining olive oil, garlic, oregano, basil, paprika, salt, and pepper. Spread seasoned chicken evenly over the vegetables.
- Bake: Place in the oven and bake for 25–30 minutes, or until the chicken is cooked through and vegetables are tender.
- Add finishing touches: Sprinkle cherry tomatoes and crumbled feta over the top. Bake for an additional 5–7 minutes until the feta is slightly melted.
