🧾 Ingredients

  • 2 medium acorn squash, halved and seeded
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 cup fresh cranberries
  • 2 tbsp maple syrup or honey (for the cranberry sauce)
  • 4 oz goat cheese, softened
  • 1–2 tbsp Greek yogurt (optional, for creaminess)
  • Fresh thyme or rosemary for garnish
  • Salt and pepper, to taste

👩‍🍳 Instructions

  1. Preheat the oven
    Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. Prepare the squash
    Slice the acorn squash in half and remove the seeds. Drizzle the flesh with olive oil, and season with salt and pepper. Place the squash halves on the baking sheet, cut side down. Roast for 25-30 minutes, or until the squash is fork-tender.
  3. Make the cranberry drizzle
    While the squash is roasting, make the cranberry drizzle. In a saucepan, combine the fresh cranberries and maple syrup or honey. Cook over medium heat for about 5-7 minutes, stirring occasionally until the cranberries burst and form a thick sauce. Once done, remove from heat and set aside.
  4. Prepare the goat cheese topping
    In a small bowl, mix the softened goat cheese with Greek yogurt (if using) to make a creamy texture. Adjust seasoning with a pinch of salt and pepper.
  5. Assemble the dish
    Once the squash is roasted, remove it from the oven. Flip the halves over and drizzle with honey. Top each half with a generous spoonful of the creamy goat cheese mixture.
  6. Finish with cranberry drizzle
    Spoon the cranberry drizzle over the goat cheese, and garnish with fresh thyme or rosemary.
