- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, chilled and cubed
- 1 cup shredded cheddar cheese
- ¼ cup cold water (adjust as needed)
Ingredients for the Cream Filling:
- 1 cup heavy cream
- 1 cup cream cheese, softened
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Prepare the Biscuit Dough:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the flour, baking powder, and salt.
- Add the cold, cubed butter and cut it into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the shredded cheddar cheese.
- Gradually add cold water, mixing until the dough just comes together (add a little more water if needed).
- Turn the dough onto a floured surface, knead it gently, and roll it out to about ½-inch thickness.
- Using a round cutter, cut out biscuit shapes and place them on the prepared baking sheet.
- Bake for 12-15 minutes or until the biscuits are golden brown. Allow them to cool completely.
- Make the Cream Filling:
- In a medium bowl, beat together the heavy cream, cream cheese, powdered sugar, and vanilla extract until smooth and thickened.
- Refrigerate the filling while the biscuits cool to ensure it firms up.
- Assemble the Sandwiches:
- Once the biscuits have cooled, spread a generous amount of cream filling on the flat side of one biscuit.
- Place another biscuit on top to form a sandwich.
- Optionally, sprinkle some extra shredded cheese or herbs on top for garnish.
- Serve:
- Serve these cheesy, creamy biscuits immediately for a warm and delicious treat, or refrigerate until ready to enjoy.
