Introduction:
This gluten-free bread recipe yields a soft, airy loaf with a golden crust and tender crumb. It’s perfect for making sandwiches, toast, or simply enjoying with butter. The recipe is easy to follow and produces a delicious gluten-free alternative to traditional bread.

Ingredients:

  • 2 1/2 cups gluten-free all-purpose flour (make sure it’s a blend with xanthan gum)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon active dry yeast
  • 1 1/2 cups warm water (about 110°F / 45°C)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon baking soda
  • 1 egg (optional, for richer texture)

Instructions:

  1. Prepare the yeast mixture:
    • In a small bowl, combine the warm water, sugar, and yeast. Stir to dissolve the sugar and let it sit for about 5-10 minutes, or until it becomes frothy.
  2. Mix dry ingredients:
    • In a large bowl, whisk together the gluten-free flour, salt, and baking soda.
  3. Combine wet and dry ingredients:
    • Add the olive oil, apple cider vinegar, and egg (if using) to the frothy yeast mixture. Mix until well combined.
    • Gradually pour the wet mixture into the dry ingredients, stirring to form a sticky dough. The dough will be slightly thicker than a batter but still soft.
  4. Knead the dough:
    • Transfer the dough onto a parchment paper-lined loaf pan and smooth the top with a spatula. If you prefer a round loaf, shape the dough into a round ball and place it on a baking sheet lined with parchment paper.
    • Cover the dough with a clean kitchen towel and let it rise in a warm place for 30-45 minutes, or until it has doubled in size.
  5. Bake the bread:
    • Preheat your oven to 375°F (190°C).
    • Once the dough has risen, bake the bread for 30-35 minutes, or until the crust is golden brown and the loaf sounds hollow when tapped on the bottom.
  6. Cool the bread:
    • Remove the bread from the oven and allow it to cool completely on a wire rack before slicing.
