
š² Filipino Pork Sour Soup (Sinigang na Baboy)
Ingredients
- 2 lbs pork belly or ribs, cut into chunks
- 6 cups water
- 1 medium onion, quartered
- 2 medium tomatoes, quartered
- 1 pack tamarind soup mix (or fresh tamarind, boiled and strained)
- 1 cup sitaw (long beans), cut into 2-inch pieces
- 1 cup okra
- 1 eggplant, sliced
- 2 green chilies (siling pangsigang)
- 2 cups kangkong (water spinach)
- Fish sauce or salt, to taste
- Pepper, to taste
Instructions
- In a large pot, add pork and water. Bring to a boil, skim off scum, then lower heat and simmerĀ 45ā60 minutesĀ until tender.
- Add onion and tomatoes, simmer for 10 minutes.
- Stir in tamarind soup mix (or tamarind extract), adjust sourness to taste.
- Add long beans, okra, eggplant, and green chilies. Cook forĀ 5ā7 minutesĀ until vegetables are tender.
- Season with fish sauce or salt and pepper.
- Add kangkong leaves, cook forĀ 1ā2 minutesĀ until wilted.
- Serve hot with steamed white rice. šāØ
