Filipino Pork Sour Soup 🄘


šŸ² Filipino Pork Sour Soup (Sinigang na Baboy)

Ingredients

  • 2 lbs pork belly or ribs, cut into chunks
  • 6 cups water
  • 1 medium onion, quartered
  • 2 medium tomatoes, quartered
  • 1 pack tamarind soup mix (or fresh tamarind, boiled and strained)
  • 1 cup sitaw (long beans), cut into 2-inch pieces
  • 1 cup okra
  • 1 eggplant, sliced
  • 2 green chilies (siling pangsigang)
  • 2 cups kangkong (water spinach)
  • Fish sauce or salt, to taste
  • Pepper, to taste

Instructions

  1. In a large pot, add pork and water. Bring to a boil, skim off scum, then lower heat and simmerĀ 45–60 minutesĀ until tender.
  2. Add onion and tomatoes, simmer for 10 minutes.
  3. Stir in tamarind soup mix (or tamarind extract), adjust sourness to taste.
  4. Add long beans, okra, eggplant, and green chilies. Cook forĀ 5–7 minutesĀ until vegetables are tender.
  5. Season with fish sauce or salt and pepper.
  6. Add kangkong leaves, cook forĀ 1–2 minutesĀ until wilted.
  7. Serve hot with steamed white rice. šŸšāœØ
