Creamy Slow Cooker Potatoes
Ingredients:
- 6-8 medium potatoes, peeled and diced
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1/2 cup melted butter
- 1 packet ranch seasoning mix
- 1 1/2 cups shredded cheddar cheese
- Salt and pepper, to taste
- Crushed crackers (optional, for topping)
Instructions:
- Prepare Potatoes: Peel and dice the potatoes into small cubes. Place them into the slow cooker.
- Mix Ingredients: In a separate bowl, combine the cream of chicken soup, sour cream, melted butter, ranch seasoning mix, and a pinch of salt and pepper.
- Combine: Pour the mixture over the potatoes in the slow cooker. Stir gently to coat the potatoes evenly.
- Cook: Cover and cook on low for 4-5 hours or until the potatoes are tender.
- Add Cheese: About 15 minutes before serving, stir in shredded cheddar cheese. Continue to cook until the cheese is melted.
- Optional Topping: For a crispy topping, sprinkle crushed crackers over the top and let them bake for the last 10 minutes.
