Creamy Slow Cooker Potatoes

Ingredients:

  • 6-8 medium potatoes, peeled and diced
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 packet ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper, to taste
  • Crushed crackers (optional, for topping)

Instructions:

  1. Prepare Potatoes: Peel and dice the potatoes into small cubes. Place them into the slow cooker.
  2. Mix Ingredients: In a separate bowl, combine the cream of chicken soup, sour cream, melted butter, ranch seasoning mix, and a pinch of salt and pepper.
  3. Combine: Pour the mixture over the potatoes in the slow cooker. Stir gently to coat the potatoes evenly.
  4. Cook: Cover and cook on low for 4-5 hours or until the potatoes are tender.
  5. Add Cheese: About 15 minutes before serving, stir in shredded cheddar cheese. Continue to cook until the cheese is melted.
  6. Optional Topping: For a crispy topping, sprinkle crushed crackers over the top and let them bake for the last 10 minutes.
  7. Serve & Enjoy: Stir the potatoes well, serve, and enjoy the creamy goodness!
