Ingredients:

  • 1 lb (450g) ground sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 large carrots, diced
  • 1 1/2 cups elbow macaroni (or any pasta you prefer)
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup whole milk
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the sausage:
    • In a large pot, cook the ground sausage over medium heat until browned. Break it up into small pieces as it cooks. Once cooked, remove any excess fat from the pot.
  2. Sauté the vegetables:
    • Add the diced onion and minced garlic to the pot with the sausage. Sauté until the onion becomes soft and translucent, about 3-5 minutes.
  3. Add the broth and vegetables:
    • Add the diced carrots and chicken broth to the pot. Stir everything together and bring to a simmer. Let it cook for about 10 minutes, or until the carrots are tender.
  4. Cook the pasta:
    • Stir in the elbow macaroni (or your choice of pasta) and cook according to the package instructions, about 8-10 minutes, or until al dente.
  5. Make it creamy:
    • Reduce the heat to low and stir in the heavy cream and milk. Simmer for an additional 5 minutes, allowing the soup to thicken slightly.
  6. Season:
    • Season with salt and pepper to taste. Adjust the seasonings as needed.
  7. Garnish and serve:
    • Serve the soup hot, garnished with freshly chopped parsley for added flavor and color.

Pro Tip:

For a thicker soup, add more heavy cream or let it simmer a bit longer to reduce. You can also use a mix of sweet and spicy sausage for extra flavor!
