These caramel cheesecake bars are rich, creamy, and perfectly layered with a buttery biscuit base and a glossy caramel topping. Each bite melts in your mouth with the perfect balance of sweetness and smoothness—an easy dessert that looks fancy and tastes unforgettable.
Ingredients
- 200 g digestive biscuits (or graham crackers), crushed
- 100 g melted butter
- 400 g cream cheese, softened
- 120 g sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 200 ml caramel sauce (store-bought or homemade)
- Optional: white chocolate drizzle for topping
Instructions
- Preheat the oven to 170°C (340°F). Line a square baking pan with parchment paper.
- Mix the crushed biscuits with melted butter, press firmly into the pan, and chill for 10 minutes.
- Beat the cream cheese and sugar until smooth, then add eggs one at a time and mix in vanilla.
- Pour the cheesecake mixture over the crust and smooth the top.
- Bake for 30–35 minutes until set but slightly jiggly in the center. Let cool completely.
- Spread caramel sauce evenly on top and drizzle with white chocolate if desired.
- Refrigerate for at least 3 hours, then cut into bars and serve.
