Canadian Cheese Soup

Ingredients:

  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 1 carrot, peeled and grated
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1 tbsp all-purpose flour (optional, for thickening)

Instructions:

  1. In a large pot, melt butter over medium heat. Add the chopped onion and grated carrot, cooking until soft and translucent, about 5 minutes.
  2. Add minced garlic and cook for another minute, until fragrant.
  3. Stir in the flour (if using), and cook for another minute to form a roux.
  4. Slowly add the chicken or vegetable broth, whisking constantly to avoid lumps. Bring to a simmer.
  5. Once the soup begins to thicken, reduce the heat to low and add the milk, stirring to combine.
  6. Add the shredded cheddar cheese and stir until the cheese is completely melted and the soup becomes smooth.
  7. Stir in the heavy cream, and season with salt and pepper to taste.
