🥬 Cabbage Roll Soup with Meatballs

Ingredients:

For the Meatballs:

  • 1 lb ground beef (or a mix of beef & pork)
  • ½ cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 2 tbsp fresh parsley or dill, chopped
  • 1 tsp paprika
  • Salt & pepper to taste

For the Soup:

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups cabbage, shredded
  • 4 cups beef or chicken broth
  • 1 can (14 oz) crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp dried thyme (or dill)
  • 1 bay leaf
  • Salt & pepper to taste

Instructions:

  1. Make the Meatballs
    • In a bowl, mix ground meat, rice, onion, garlic, egg, parsley, paprika, salt, and pepper.
    • Form into small meatballs (about 1 to 1.5 inches). Set aside.
  2. Start the Soup
    • In a large pot, heat olive oil. Sauté onion, carrots, and celery until softened (about 5 minutes).
    • Stir in tomato paste, paprika, and thyme. Cook 1 minute.
  3. Add Liquids & Cabbage
    • Add broth, crushed tomatoes, bay leaf, and shredded cabbage. Bring to a boil.
  4. Cook the Meatballs in Soup
    • Gently drop the meatballs into the simmering soup.
    • Reduce heat, cover, and let simmer for 25–30 minutes until meatballs are cooked through and cabbage is tender.
  5. Finish & Serve
    • Taste and adjust seasoning with salt & pepper.
    • Remove bay leaf.
    • Garnish with fresh dill or parsley before serving.
