Baked Spinach Mushroom Quesadillas
These baked spinach mushroom quesadillas are a simple, satisfying meal with crispy tortillas and a cheesy, savory vegetable filling. Baking them keeps things lighter while delivering big flavor—perfect for an easy weeknight dinner or a shareable snack.
Ingredients
- 4 large flour tortillas
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil in a skillet over medium heat. Sauté onion and garlic until soft.
- Add mushrooms and spinach; cook until tender and wilted. Season with salt and pepper.
- Place one tortilla in a baking dish. Sprinkle cheese, add spinach-mushroom mixture, then top with another tortilla. Repeat with remaining ingredients.
- Bake 10–15 minutes until tortillas are golden and cheese is melted.
- Slice into wedges and serve warm.
