Ingredients

  • 2 large onions, thinly sliced
  • 1 tablespoon olive oil
  • 2 cups mushrooms, sliced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon turmeric (anti-inflammatory)
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh thyme (plus extra for garnish)
  • 1/2 cup dry white wine (optional)
  • Salt and pepper to taste
  • gluten-free croissants (or regular croissants, if preferred)
  • 1 cup shredded cheese (such as Gruyère or a dairy-free cheese for a gluten-free version)

Instructions

  1. Cook the onions: Heat the olive oil in a large pot over medium heat. Add the sliced onions and cook, stirring occasionally, for 20-25 minutes until they become golden brown and caramelized.
  2. Add the mushrooms: Stir in the sliced mushrooms and cook for 5-7 minutes, allowing them to release their moisture and become tender.
  3. Add the spices and broth: Add turmericgarlic powder, and fresh thyme to the pot. Pour in the broth and bring the mixture to a simmer. If using white wine, add it now and let it cook down for another 5 minutes.
  4. Simmer the soup: Let the soup simmer for another 10-15 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
  5. Prepare the croissant topping: Preheat the oven to 350°F (175°C). Slice the croissants in half, and place them on a baking sheet. Top with shredded cheese and bake for 5-7 minutes or until golden and melted.
  6. Assemble: Ladle the soup into bowls. Place the cheesy croissant halves on top of each bowl of soup. Garnish with additional fresh thyme.
  7. Serve: Enjoy this rich, comforting soup with its delicious, cheesy topping.

Tip: The turmeric and garlic in this soup bring anti-inflammatory properties, perfect for boosting health while savoring a classic French dish. Enjoy!
