Ingredients:

  • 1 1/2 cups gluten-free all-purpose flour (make sure it includes xanthan gum)
  • 1 teaspoon sugar
  • 1 tablespoon active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup warm water (about 110°F/43°C)
  • 1 tablespoon olive oil (plus more for brushing)
  • 1/4 teaspoon garlic powder (optional, for flavor)
  • 1/4 teaspoon onion powder (optional, for flavor)

Instructions:

  1. Activate the yeast: In a small bowl, mix the warm water with sugar and sprinkle the yeast over the top. Stir gently and let it sit for 5-10 minutes, or until the mixture becomes frothy.
  2. Prepare the dough: In a large mixing bowl, combine the gluten-free flour and salt. Pour the activated yeast mixture into the dry ingredients and add the olive oil. Mix well until a dough forms. If the dough is too dry, add a little more water, 1 tablespoon at a time.
  3. Knead the dough: Turn the dough out onto a floured surface and knead for 2-3 minutes until smooth. (If the dough is sticky, sprinkle with a little more gluten-free flour.)
  4. Let the dough rise: Cover the dough with a clean kitchen towel and let it rise for 30-40 minutes, or until it has slightly doubled in size.

  6. Preheat the air fryer: Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  7. Cook the bread: Place one flattened dough disc in the air fryer basket (don’t overcrowd) and cook for 6-8 minutes, or until the bread is golden and cooked through. Repeat with the remaining dough.
