Homemade Soft & Fluffy Flour Flatbreads

đź›’ Ingredients

For the Dough

  • 4 cups (500 g) all-purpose flour
  • 1½ teaspoons salt
  • 1 teaspoon baking powder
  • 4 tablespoons (55 g) unsalted butter, softened or melted
  • 1½ cups (360 ml) warm water, added gradually
  • 1 tablespoon vegetable oil, optional

For Cooking

  • 1–2 tablespoons vegetable oil or melted butter, optional
  • Extra flour for dusting the work surface

👩‍🍳 Instructions

1. Prepare the Dry Ingredients

In a large mixing bowl, combine the flour, salt, and baking powder. Whisk everything together thoroughly so the salt and baking powder are evenly distributed throughout the flour.

2. Add the Butter

Add the softened or melted butter to the flour mixture. Use your fingertips to rub the butter into the flour until the mixture looks slightly crumbly and the flour is evenly coated.

This step helps create a softer and more tender flatbread.

3. Add the Water

Gradually pour in the warm water while mixing with your hand or a wooden spoon.

Do not add all the water at once. Depending on your flour, you may need slightly more or slightly less.

Mix until a soft, slightly sticky dough begins to form.

4. Knead the Dough

Transfer the dough to a lightly floured surface and knead for about 6–8 minutes.

The dough should become smooth, soft, and elastic.

If the dough feels extremely sticky, sprinkle in a small amount of flour. Avoid adding too much flour because this can make the flatbreads tough.

5. Let the Dough Rest

Place the dough in a lightly oiled bowl and cover it with a clean kitchen towel or plastic wrap.

Let it rest for 20–30 minutes at room temperature.

Resting allows the gluten to relax, making the dough much easier to roll out.

6. Divide the Dough

Place the rested dough on your work surface and divide it into 10–12 equal pieces, depending on how large you want your flatbreads.

Roll each piece into a smooth ball.

Cover the dough balls with a clean towel and let them rest for another 10 minutes.

7. Roll Out the Flatbreads

Lightly flour your work surface.

Take one dough ball and gently flatten it with your fingers. Using a rolling pin, roll it into a thin, round circle about 7–9 inches (18–23 cm) wide.

Try to keep the thickness as even as possible.

Repeat with the remaining dough balls.

8. Heat the Skillet

Place a large cast-iron skillet or heavy frying pan over medium-high heat.

Allow the skillet to become properly hot before cooking.

You don’t need a lot of oil. These flatbreads cook beautifully on a dry hot skillet, although you can lightly brush the pan with oil if desired.

9. Cook the Flatbreads

Place one rolled-out flatbread onto the hot skillet.

Cook for approximately 30–60 seconds, or until small bubbles begin to appear on the surface.

Flip it over and cook the other side for another 30–60 seconds.

You should see beautiful golden-brown spots developing across the surface.

If the flatbread puffs up, gently press it with a spatula to help it cook evenly.

10. Keep Them Soft

Remove the cooked flatbread from the skillet and immediately place it inside a clean kitchen towel.

Continue cooking the remaining flatbreads and stack them inside the towel.

Keeping them covered allows the steam to remain inside and helps keep the flatbreads soft and flexible.

✨ Helpful Tips

  • Use warm water: It helps create a soft, workable dough.
  • Don’t over-flour the dough: Too much flour can make the flatbreads dry or chewy.
  • Let the dough rest: This makes rolling much easier.
  • Make sure the skillet is hot: A properly heated pan gives you those beautiful golden-brown spots.
  • Don’t overcook them: Once they develop golden spots and are cooked through, remove them immediately.
  • Cover them after cooking: This is one of the best ways to keep homemade flatbreads soft.
  • For extra richness, brush the finished flatbreads lightly with melted butter while they’re still warm.
