Ingredients
For the Dough:
4 cups all-purpose flour
2¼ teaspoons active dry yeast
½ cup granulated sugar
½ teaspoon salt
¾ cup warm milk
2 large eggs
¼ cup unsalted butter, melted
1 teaspoon vanilla extract
For Frying:
Vegetable oil, as needed
For Coating:
1½–2 cups powdered sugar
Instructions
Prepare all the ingredients and make sure the milk is warm, not hot.
In a large mixing bowl, combine the flour, yeast, sugar, and salt. Add the warm milk, eggs, melted butter, and vanilla extract. Mix until a soft dough forms.
Transfer the dough to a lightly floured surface and knead for about 8–10 minutes, until smooth, soft, and elastic.
Place the dough in a lightly greased bowl. Cover with a clean towel or plastic wrap and let it rise in a warm place for about 1 hour, or until doubled in size.
Roll the dough out on a lightly floured surface to about ½-inch thickness. Use a donut cutter or two round cutters to cut out the donut shapes.
Place the donuts on a parchment-lined tray. Cover loosely and let them rise again for about 30–45 minutes, until puffy.
Heat vegetable oil to 350°F (175°C) in a deep, heavy-bottomed pan. Carefully fry the donuts in batches for about 1–2 minutes per side, until beautifully golden brown.
Remove the donuts with a slotted spoon and place them on a wire rack or paper towels to drain the excess oil. Let them cool slightly.
While the donuts are still slightly warm, place them in a bowl of powdered sugar and gently coat them on all sides.
