2 cups all-purpose flour
1 large egg
½ cup unsalted butter, melted and slightly cooled
½ cup granulated sugar
½ cup milk
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
¾ cup chopped walnuts
For the Vanilla Frosting:
½ cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
2–3 tablespoons milk
Pinch of salt
For Garnish:
¼ cup chopped walnuts
👩‍🍳 Instructions
Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper.
In a large bowl, mash the ripe bananas until mostly smooth.
Add the melted butter, egg, sugar, milk, and vanilla extract. Whisk until well combined.
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
Gradually add the dry ingredients to the banana mixture. Stir gently just until combined. Do not overmix.
Fold in the chopped walnuts.
Pour the batter into the prepared baking pan and spread it evenly.
Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Remove from the oven and allow the cake to cool completely before frosting.
🧁 Make the Frosting
Beat the softened butter until smooth and creamy.
Gradually add the powdered sugar while mixing.
Add the vanilla extract and 2 tablespoons of milk. Beat until light and fluffy. Add a little more milk if needed to reach a smooth, spreadable consistency.
Spread the frosting evenly over the completely cooled banana cake.
Sprinkle the top with chopped walnuts.
Cut into squares and serve. 🍌🌰
