Ingredients
For the Dough:
3 ½ cups (440 g) all-purpose flour
2 ¼ teaspoons (7 g) instant yeast
¼ cup (50 g) granulated sugar
½ teaspoon salt
¾ cup (180 ml) warm milk
2 large eggs
4 tablespoons (55 g) unsalted butter, melted
1 teaspoon vanilla extract
For Frying:
Vegetable oil, enough for deep frying
For the Glaze:
2 cups (240 g) powdered sugar
3–4 tablespoons milk
1 teaspoon vanilla extract
👩🍳 Instructions
In a large bowl, combine the warm milk, sugar, and instant yeast. Let it sit for about 5 minutes.
Add the eggs, melted butter, and vanilla extract. Mix until combined.
Gradually add the flour and salt, mixing until a soft dough forms.
Knead the dough for about 8–10 minutes, until smooth and elastic.
Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
Transfer the dough to a lightly floured surface and roll it out to about ½ inch (1.25 cm) thick.
Use a drinking glass or small round bowl to cut the dough into circles. Use a small glass or bottle cap to cut out the centers. No metal doughnut cutter is needed.
Place the doughnuts on parchment paper, cover loosely, and let them rest for 20–30 minutes.
Heat vegetable oil to 350°F (175°C).
Carefully fry the doughnuts in batches for about 1–2 minutes per side, until beautifully golden brown.
Remove them and place them on a wire rack or paper towels to drain.
For the glaze, whisk together the powdered sugar, milk, and vanilla until smooth and slightly thick.
Dip the warm doughnuts into the glaze, allowing the excess to drip off.
Let them sit for a few minutes until the glaze sets.
