Ingredients
4 large russet potatoes
4 cups vegetable oil, for frying
1 teaspoon fine salt, or to taste
Β½ teaspoon black pepper
Optional: Β½ teaspoon paprika or your favorite seasoning
Instructions
Prepare the potatoes: Wash and peel the potatoes. Slice them into very thin, even rounds using a mandoline or a sharp knife.
Soak: Place the potato slices in a large bowl of cold water. Let them soak for 20β30 minutes to remove excess starch.
Dry completely: Drain the potatoes and spread them over a clean kitchen towel. Pat them very dry. This step is important for crispy chips and safer frying.
Heat the oil: Pour the vegetable oil into a deep, heavy skillet or pot. Heat to about 350Β°F (175Β°C).
Fry: Fry the potato slices in small batches. Do not overcrowd the pan. Cook for about 2β4 minutes, turning occasionally, until golden and crisp.
Drain: Remove the chips with a slotted spoon and place them on a wire rack or paper towels to drain excess oil.
Season: Immediately sprinkle with salt, black pepper, and any optional seasoning while the chips are still warm.
Serve: Let them cool for a few minutes, then serve and enjoy your homemade, crunchy potato chips!
