Ingredients
1 cup (226 g) unsalted butter, softened
½ cup (100 g) granulated sugar
1 tsp vanilla extract
2 cups (250 g) all-purpose flour
½ cup (60 g) whole wheat flour
¼ tsp salt
2–3 tbsp milk, if needed
Instructions
Make the dough:
In a large bowl, beat the softened butter and sugar until smooth and creamy. Add the vanilla extract and mix well.
Add the dry ingredients:
Gradually add the all-purpose flour, whole wheat flour, and salt. Mix until a soft dough forms. If the dough feels too dry or crumbly, add milk 1 tablespoon at a time until it comes together.
Chill:
Shape the dough into a disk, cover, and refrigerate for 20–30 minutes.
Shape the cookies:
Preheat the oven to 350°F (175°C). Roll the dough out to about ¼ inch (6 mm) thick. Cut into round cookies using a cookie cutter or glass.
Add the holes:
Place the cookies on a parchment-lined baking sheet. Use a toothpick or skewer to make small holes across the surface of each cookie.
Bake:
Bake for 12–16 minutes, or until the edges are lightly golden.
Cool:
Let the cookies cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.
