Ingredients
For the Dough:
3½ cups (440g) all-purpose flour
1 ripe banana, mashed
¼ cup (50g) granulated sugar
2¼ tsp (7g) instant yeast
½ tsp salt
¾ cup (180ml) warm milk
1 large egg
¼ cup (60g) unsalted butter, softened
1 tsp vanilla extract
For the Filling:
¼ cup (55g) unsalted butter, softened
½ cup (100g) brown sugar
1½ tbsp ground cinnamon
1 ripe banana, thinly sliced
For the Cream Cheese Frosting:
4 oz (115g) cream cheese, softened
2 tbsp unsalted butter, softened
¾ cup (90g) powdered sugar
1 tsp vanilla extract
1–2 tbsp milk, as needed
Instructions
Make the dough: In a large bowl, combine the warm milk, sugar, and instant yeast. Let it sit for about 5 minutes.
Add the mashed banana, egg, softened butter, vanilla, and salt. Mix well.
Gradually add the flour and mix until a soft dough forms.
Knead the dough for 7–10 minutes until smooth and slightly elastic.
Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
Prepare the filling: In a small bowl, mix the brown sugar and cinnamon.
Roll the dough into a rectangle on a lightly floured surface. Spread the softened butter evenly over the dough.
Sprinkle the cinnamon-sugar mixture over the butter and arrange the sliced banana on top.
Roll the dough tightly from the long side into a log. Cut into 10–12 equal rolls.
Arrange the rolls in a greased baking dish, leaving a little space between them. Cover and let them rise for another 30–45 minutes.
Bake: Preheat the oven to 350°F (175°C). Bake for 22–28 minutes, or until golden brown and cooked through.
Make the frosting: Beat the cream cheese and butter until smooth. Add the powdered sugar and vanilla, then mix until creamy. Add milk little by little if needed.
Let the cinnamon rolls cool for a few minutes, then spread the cream cheese frosting generously over the top.
Serve warm and enjoy these soft, gooey, banana-filled cinnamon rolls! 🍌🤎
