🍩 The Fluffiest Homemade Donuts

Ingredients — Makes 12 Donuts
For the dough:
500 g all-purpose flour (about 4 cups)
10 g instant dry yeast
70 g granulated sugar (⅓ cup)
½ teaspoon salt
250 ml warm milk (1 cup)
2 large eggs
60 g unsalted butter, softened
1 teaspoon vanilla extract
For the coating:
150 g granulated sugar
1 teaspoon ground cinnamon, optional
Melted butter, optional
For frying:
Vegetable oil, as needed

In a large bowl, combine the flour, yeast, sugar, and salt.
Add the warm milk, eggs, and vanilla. Mix until a dough forms.
Gradually add the softened butter and knead for 10–15 minutes, until smooth, soft, and elastic.
Place the dough in a lightly greased bowl, cover, and let rise for about 1 hour, or until doubled in size.
Gently press down the dough and roll it out to about 1 cm thick.
Cut out the donuts and make a small hole in the center.
Place them on parchment paper, cover, and let them rise for another 30–40 minutes.
Heat the oil to 170–175°C (340–350°F).
Fry the donuts in small batches for 1–2 minutes per side, until golden brown.
Drain on paper towels.
While still warm, brush lightly with melted butter if desired, then coat generously with sugar or cinnamon sugar.
✨ Tip: Keep the oil temperature steady. Oil that is too hot will brown the donuts too quickly, while oil that is too cool can make them greasy.
