Ingredients
For the Chicken:
1 kg chicken drumsticks or thighs β about 8β10 pieces
1 cup (240 ml) evaporated milk or buttermilk
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
Β½ tsp ginger powder
Β½ tsp thyme
Β½ tsp chicken seasoning
Β½ tsp chili powder β optional
For the Crispy Coating:
2 cups (250 g) all-purpose flour
1Β½ cups (150 g) breadcrumbs
2 eggs
Vegetable oil, for deep frying
π©βπ³ Preparation
Pat the chicken dry, then season with salt, black pepper, paprika, garlic powder, onion powder, ginger, thyme, chicken seasoning, and chili powder.
Add the evaporated milk or buttermilk and mix well until every piece is evenly coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Place the flour in one bowl and season lightly with salt, pepper, and paprika. Beat the eggs in a second bowl, and place the breadcrumbs in a third bowl.
Take each piece of chicken from the marinade and coat it thoroughly in flour. Dip it into the beaten eggs, then coat generously with breadcrumbs, pressing gently so the coating sticks well.
Heat enough vegetable oil in a deep pot over medium heat. Fry the chicken in batches without overcrowding the pot.
Fry until the chicken is deep golden brown, crispy, and completely cooked through.
Transfer to a wire rack or paper towels to drain excess oil.
Serve hot with fries, coleslaw, ketchup, pepper sauce, or your favorite dipping sauce. ππβ€οΈ
β¨ Tip
For an extra-crispy coating, press the breadcrumbs firmly onto the chicken before frying, and avoid overcrowding the pot.
