  • ½ teaspoon kosher salt
  • 1 teaspoon cream of tartar
  • 1 teaspoon sugar
  • 2 teaspoons active dry yeast
  • 1 cup warm water
  • 2 tablespoons olive oil (or melted butter)
  • 1/3 cup plain yogurt (or dairy-free yogurt for a vegan version)

Instructions:

  1. Prepare the dry ingredients: In the bowl of a stand mixer fitted with the paddle attachment, combine the gluten-free flour, xanthan gum, salt, cream of tartar, and sugar. Whisk to combine.
  2. Activate the yeast: In a small bowl, combine the warm water and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  3. Combine the ingredients: Add the activated yeast mixture and yogurt to the dry ingredients in the stand mixer bowl. Mix on low speed until the dough starts to come together.
  4. Add the olive oil: Add the olive oil and continue mixing until the dough is smooth and elastic. If the dough feels too sticky, add a little more flour; if it’s too dry, add a small amount of water.
  5. Rest the dough: Cover the dough and let it rest for 30 minutes to 1 hour, allowing it to rise slightly.
  6. Shape the naan: Preheat a cast-iron skillet or non-stick frying pan over medium-high heat. While it heats, divide the dough into small portions and roll each portion into a ball. Roll each ball out into an oval or circle shape (about ¼-inch thick).
  7. Cook the naan: Lightly oil the skillet, then cook each naan one at a time. Place the rolled dough onto the skillet and cook for 2-3 minutes on each side, or until golden brown with slightly charred spots.
  8. Serve: Brush the cooked naan with a little melted butter or olive oil for extra flavor. Serve warm with your favorite curry, stew, or dips.
