  • 4 large yellow onions, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar (optional, helps caramelize)
  • 2 cloves garlic, minced
  • 1 tablespoon flour
  • 1/2 cup dry white wine (optional)
  • 6 cups beef broth (good quality)
  • 1 teaspoon fresh thyme (or 1/2 tsp dried)
  • Salt & black pepper to taste
  • 1 baguette, sliced
  • 1½ cups grated Gruyère cheese (or Swiss/Mozzarella mix)

👩‍🍳 Instructions

  1. Caramelize the onions
    In a large pot, melt butter with olive oil over medium heat. Add sliced onions and cook slowly for 25–35 minutes, stirring often, until deep golden brown. Add sugar halfway if using.
  2. Build flavor
    Stir in garlic and cook 1 minute. Sprinkle flour over onions and mix well. Cook for another 2 minutes.
  3. Deglaze
    Pour in white wine (if using) and scrape the bottom of the pot. Let it reduce for 2–3 minutes.
  4. Simmer
    Add beef broth and thyme. Bring to a simmer and cook 15–20 minutes. Season with salt and pepper.
  5. Prepare the topping
    Toast baguette slices until crisp.
  6. Broil
    Ladle soup into oven-safe bowls. Place toasted bread on top, cover generously with cheese, and broil 2–4 minutes until bubbly and golden.
