Roasted Cauliflower and Lentil Curry Soup

This Roasted Cauliflower and Lentil Curry Soup is warm, comforting, and full of deep curry flavor. Roasting the cauliflower adds a rich, slightly smoky taste that pairs beautifully with creamy lentils, aromatic spices, and tender potatoes. Ingredients

For the roasted cauliflower:

  • 1 medium cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon curry powder
  • ½ teaspoon paprika
  • Salt and black pepper, to taste

For the soup:

  • 1 cup red lentils, rinsed
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon curry powder
  • 1 medium potato, sliced or diced
  • 1 carrot, sliced
  • 4 cups vegetable broth
  • 1 cup coconut milk (optional, for creaminess)
  • Salt and black pepper, to taste

For garnish:

  • Fresh parsley or cilantro, chopped
  • Extra roasted cauliflower florets (optional)

Instructions

  1. Roast the Cauliflower
    • Preheat the oven to 200°C (400°F).
    • Toss cauliflower florets with olive oil, curry powder, paprika, salt, and pepper.
    • Spread on a baking tray and roast for 25–30 minutes, until golden and slightly crispy. Set aside.
  2. Prepare the Soup Base
    • In a large pot, heat a little olive oil over medium heat.
    • Sauté the onion for 4–5 minutes until soft.
    • Add garlic and ginger and cook for 1 minute until fragrant.
  3. Add Spices and Vegetables
    • Stir in cumin, turmeric, and curry powder.
    • Add lentils, potato, carrot, and vegetable broth.
  4. Simmer
    • Bring to a boil, then reduce heat and simmer for 20–25 minutes, until lentils and vegetables are tender.
  5. Blend (Optional)
    • For a creamy soup, blend part or all of the soup using a hand blender.
    • Stir in coconut milk if using.
  6. Finish and Serve
    • Add roasted cauliflower to the soup.
    • Adjust seasoning with salt and pepper.
    • Garnish with fresh herbs and serve hot.

  • Add chili flakes for extra heat
  • A squeeze of lemon brightens the flavors beautifully
