Chicken Salad Croissants Recipe

Ingredients:

For the chicken salad:

  • 2 cups cooked chicken breast, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup celery, finely chopped
  • 1/4 cup red grapes or cranberries, chopped (optional for sweetness)
  • 1/4 cup green onions, chopped
  • Salt and pepper, to taste
  • 1/4 cup toasted almonds or walnuts (optional)

For the croissants:

  • 12 buttery croissants (store-bought or homemade)

Instructions:

  1. Make the chicken salad:
    • In a large bowl, combine the shredded chicken, mayonnaise, sour cream, Dijon mustard, and lemon juice.
    • Add the chopped celery, grapes or cranberries, and green onions. Mix everything together until well-combined.
    • Season with salt and pepper to taste. If you like, you can add the toasted almonds or walnuts for extra crunch.
    • Refrigerate the chicken salad for at least 30 minutes to allow the flavors to meld.
  2. Prepare the croissants:
    • Slice the croissants in half, but do not cut all the way through (you want them to stay intact like a sandwich roll).
  3. Assemble the sandwiches:
    • Spoon a generous amount of chicken salad into each croissant half.
    • Close the croissants and arrange them on a platter.
  4. Serve:
    • These croissants can be served immediately or stored in the refrigerator for a few hours before serving. They are great as a snack, appetizer, or lunch!

Enjoy these delicious chicken salad croissants with your friends and family! 😋
