Baked Spinach Mushroom Quesadillas
These baked spinach mushroom quesadillas are a simple, satisfying meal with crispy tortillas and a cheesy, savory vegetable filling. Baking them keeps things lighter while delivering big flavor—perfect for an easy weeknight dinner or a shareable snack.

Ingredients

  • 4 large flour tortillas
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until soft.
  3. Add mushrooms and spinach; cook until tender and wilted. Season with salt and pepper.
  4. Place one tortilla in a baking dish. Sprinkle cheese, add spinach-mushroom mixture, then top with another tortilla. Repeat with remaining ingredients.
  5. Bake 10–15 minutes until tortillas are golden and cheese is melted.
  6. Slice into wedges and serve warm.

Crispy on the outside, melty on the inside—these quesadillas are always a hit.
